Maple Bacon Peanuts

I do love a GIRL’S NIGHT! It doesn’t happen often and we talk a real good game about “getting together” or “making it a monthly outing.” Let’s face it, life just gets in the way. However, sometimes you have to pull the rip cord and actually make the night happen.

I was flipping through my phone and came across some pics of a girl’s night from last summer. I smiled at each passing photo and was reminded of the Maple Bacon Peanuts from one of the restaurants we stopped to have a drink. I remembered I made a note in my phone about these nuts and how I wanted to make them myself. Great party food. Here are a few of the photos from that night. WARNING: There is a lot of tongue action and a girl named Delores that wanted to hang out with us. TEE HEE.

I can’t remember the dudes name, but he was with Delores. Me, Woody, Delores (I remember her name because it rhymes with a certain body part. We discussed this at length that night), of course, P and more tongue action.

We drank responsibly, we ate a lot and we had a fantastic time. Of course we talked about how we are going to get together more often and how we should do this each month. Well, here we are, about 8 months later and we finally have plans on the books in a few weeks.

While we wait for the illusive girl’s night out, how about some MAPLE BACON PEANUTS:

1 cup of roasted & salted peanuts

6 tablespoons of Maple Syrup

2-3 strips of bacon, cooked and chopped

Prepare a baking sheet with a piece of parchment paper sprayed with cooking spray. In a small saucepan, stir together the bacon, maple syrup and peanuts.

Place the saucepan over medium heat and stir constantly.

In a few minutes the peanuts and bacon will start to absorb the maple syrup. When the mixture has become cohesive, remove from the heat.

Spread the mixture onto your prepared baking sheet and let cool completely. Break up the mixture and store in an airtight container for a few days or eat them!
