Free the Banana Bread

Several years ago I was approached to bake for a gluten free wedding. At first I was a little hesitant. Gluten allergies or Celiac's were just starting to become widely known. However, true to my nature, I was determined to impress the bride and groom with my favorite flavors of cupcakes, just gluten free.

I did a lot of research and many tests in the kitchen. Many samples were delivered around the neighborhood or brought to work. After lots of critiques I finally got a few recipes together. Those recipes solidified the job and 200 gluten free cupcakes were ordered.

I did learn that not all gluten free products are created equal. I tested several different products, some marketed as gluten free and some that were simply gluten free. The following recipe uses the products I found to produce the best gluten free results.

You will also notice this recipe is dairy free. As much as it pains me to know people who suffer from a gluten allergy, I have recently come across lots of people who have developed severe dairy allergies.

This banana bread is gluten and dairy free. My kids love it!

GLUTEN FREE & DAIRY FREE BANANA BREAD:

1 3/4 cup of Bob's Red Mill Rice Flour

1/4 cup of potato starch

1 teaspoon of xanthum gum

1 teaspoon of baking powder

1/2 teaspoon of kosher salt

1/2 cup of vegetable oil

1 cup of sugar

2 eggs

3 very ripe bananas

2 teaspoons of cinnamon

1/4 cup of fresh squeezed orange juice

Preheat the oven to 350 degrees. Prepare a loaf pan with parchment paper and non stick cooking spray.

In a medium bowl, whisk together the rice flour, potato starch, xanthum gum, baking powder and salt.

In a large bowl, whisk together the sugar, vegetable oil and eggs.

In a small bowl, smash the bananas, cinnamon and orange juice together.

Add the smushed bananas to the sugar mixture and whip them up.

Pour the dry mix into the wet ingredients.

Gently fold the ingredients together. Try not to over mix. Pour the batter into the loaf pan. Bake for 45-55 minutes.

Check the doneness with a toothpick. If the toothpick comes out clean, the bread is done.
